What is Sushi and Sashimi?
The Japanese word su means vinegar, and shi is from meshi meaning rice, so sushi is “vinegared rice.” The word sushi is commonly used to describe a finger-sized piece of raw fish or shellfish wrapped in vinigared rice and seaweed. It can be eaten as is or dipped in shoyu (Japanese soy sauce) and or wasabi (Japanese hot mustard). Sushi is as much a work of art as it is a delectable meal. While it’s available in a quick and easy western style, the traditional way is far from lost at Miss Sushi.
Sashimi also allows the diner to experience the true flavor of the fish, but it is a bit less complex. Raw sliced fish with no rice bed or roll is served alongside daikon (Japanese white radish), shoyu, shiso (a large green leaf) and or wasabi, depending on the dish. Sashimi is cut in ways that enhance the appearance of the fish. Hira zukuri is the standard rectangular shape. A thinner cut is called ito zukuri, often no more than 1/16 inch thick. The thinnest, kaku zukuri, is paper thin and is often presented in a pattern, varying the look and texture of the fish.
